La Complètement Marteau: When Lobster Meets Beef

Sometimes, genius is born from a touch of madness. At Tartineke, we like to push the boundaries of what can be put between two slices of bread.

With « La Complètement Marteau », we wanted to create the most decadent and refined sandwich in Wavre. A recipe that marries the power of the land with the finesse of the sea.

The « Surf & Turf » concept in a sandwich

Combining meat and shellfish is a gastronomy classic. We adapted this concept into a generous club sandwich version:

  • The Land (The Beef): We use ultra-fresh Beef Carpaccio. Unlike cooked steak, raw meat brings a melting and silky texture that coats the palate.
  • The Sea (The Lobster): No canned crumbs here. We use lobster pieces that we cook ourselves in the workshop. It is firm, briny, and incredibly noble.

The secret is in the sauce

To marry these two worlds, a link was needed. We created a homemade smoked mayonnaise.

This « smokey » taste recalls barbecue and works wonderfully with the beef, whilst enhancing the natural sweetness of the lobster. Add to that:

  • Spring onions for the kick.
  • Arugula for the peppery note.
  • A 3-slice assembly (Club style) for perfect hold.

A unique experience in Walloon Brabant

This is the sandwich for the curious and the epicureans. It’s the one you order when you want to prove to yourself that a quick lunch can be as exciting as a restaurant dish.
